MEET THE MAN BEHIND THE CAJUN FLAVOR

Born and raised in Lake Charles with deep family roots in Breaux Bridge, Louisiana, Matt Coltrin grew up surrounded by faith, family, and authentic Cajun cooking. After the events of September 11, he answered the call to serve, dedicating more than 21 years to the United States Air Force while living around the world. No matter where life took him, one thing never changed—the love for the flavors of home. After retiring from military service, Matt began a new mission: bringing the food, culture, and hospitality of Louisiana to Alabama through Roll Cajun Boudin.

FROM THE MILITARY
TO THE KITCHEN

After retiring from the Air Force, Matt hung up his uniform and tied on an apron. With a passion for authentic Cajun cooking and recipes perfected over the years, he launched Acadiana #1, bringing handcrafted boudin and Louisiana classics to the streets of Birmingham.

What started as one food truck quickly became something bigger. From festivals and breweries to private events and neighborhood gatherings, Acadiana #1 introduced thousands of people to authentic Louisiana flavor and laid the foundation for what would become Roll Cajun Boudin.
