About Roll Cajun
My name is Matt Coltrin, and Roll Cajun Boudin is more than just a business—it’s my family’s story, my passion, and my way of bringing the heart of Louisiana to the world. I grew up in Lake Charles, Louisiana, but my family is from Breaux Bridge, where my folks live now. Life revolved around faith, heritage, and food. My wife Renee, our sons Clayton and Charlie, and I are blessed to come from a long line of LeBlancs, Carmadelles, Ardeneauxs, Perrillouxs, and Coltrins (Italian—long story) with roots that run deep in the heart of Acadiana.
On September 11, 2001, my life took a turn I never could have imagined. I was a pole vaulter at the University of Louisiana at Lafayette “Ragin' Cajuns” when 9/11 shook the nation. I felt an unshakable call to serve, leaving behind everything familiar to join the United States Air Force. For the next 21 years, my family and I lived all over the world—from Iraq to Japan, South Korea to Washington, D.C. Yet no matter where I went, something was always missing: the taste of home.
Real Cajun boudin—meat-filled, spicy, and bursting with flavor—isn’t just food; it’s a connection to where I’m from, to the love and joy Louisiana cuisine represents. I couldn’t find it anywhere, and when shipping became too expensive, I decided to make it myself. For years, I worked tirelessly to perfect my recipe, determined to recreate the flavors that defined my childhood.

In August 2023, I retired from military service and moved to Homewood, Alabama, for my first job post-service. Around March of 2024, with my family’s support, I turned my dream into reality by opening a small business selling boudin. By August 2024, Roll Cajun Boudin officially opened Acadiana #1, our food truck, allowing us to sell boudin hot and expand to many Cajun classics we’ve grown to love. In December 2024, I resigned from my other job, and Roll Cajun went full-time! We are new to the food industry, but let me tell you—when it comes to authentic Cajun cooking, NEAUX ONE COMES CLOSE! This journey hasn’t been easy, but it’s been fueled by faith, passion, and the joy of seeing people light up with that first bite.

What started as a small grocery store selling handcrafted boudin has grown into something bigger than we imagined. Now, we bring the soul of Louisiana all over Alabama. Every dish is crafted with love, and every event we cater is a chance to share a piece of our hearts with you.
